and today I will be making a video because I got so many questions from you guys about icing

many of you ask me questions about what are the different types of icing

and what type should I be using for which treats

when I first started making I did not know that there are different kinds of icing

and sometimes when I would make treats it would be extremely difficult to

because I wasn't using the right icing for the job

the 2 icings that I use the most are a buttercream icing or frosting and royal icing

the difference between icing and frosting kind of reminds me of math class.

We're not all rectangles are squares, but squares are rectangles that kinda thing.

So the 2 that we're going to talk about today is buttercream icing or frosting

whatever you'd like to call it and royal icing
你想叫什么都可以,还有硬糖霜
the first buttercream icing.
首先是奶油糖衣。
Buttercream is good for almost anything, I use it all the time.
奶油糖衣可以用于制作任何东西,我一直都在用它。
It's really good for covering cakes, cupcakes making decorations and designs
它真的很适合挤在蛋糕上面,在蛋糕上面做装饰和设计
and you can make it different consistencies to do different things

buttercream at a thin consistency is good for frosting a cake

or piping on lines for details like we did on the Borg Cube cake.

Buttercream medium consistency is really good for making 2d shapes

or borders like around your cake

I used a medium buttercream consistency to make the grumpy cat cake

to make all of his fur all the way around the cake

it's thick enough to hold the shape of the fur.

To make a buttercream stiff consistency

your just going to add a lot more powdered sugar

and this consistency is really good for detailed decorations and designs

and you can make things like flowers that you see on wedding cakes or birthday cakes.

A quick tip to test the consistency of your buttercream is this spatula test

in front of me I have three cups of buttercream icing

this one is thin inconsistency, this one is a medium, and this one is this stiff.

You just place your spatula down in the center

and if it falls over that is thin consistency.

For the medium consistency when you insert the spatula the in middle

it should lean but at a much slower pace

and for the last one if the spatula inserted stand straight up and down you have a stiff consistency.

The second type of icing that I use a lot of is called royal icing

this icing can be made using meringue powder and water

just like the buttercream you can make it was different consistencies

this icing is the best to use when you're decorating cookies

I did not know this when I first started baking

and I used to use buttercream

so over here I saved some buttercream to show you guys

it’s not bad you can definitely do this is just not as smooth

when I was using buttercream on cookies

I just couldn't get it to look like the cookies that I saw in bakeries

and then I realize they're using royal icing

over here in this decorating bag I have some royal icing that I've coloured to be a blue

color,

I love using royal icing to decorate cookies

because it dries to a smooth hard finish

also this is a medium consistency which is best for outlining cookies

let me show so you're just gonna pipe on and outline all the way around the cookie

and now this is where in the second bag

I have royal icing but it is a thin consistency.

You can thin your royal icing consistency by adding a little bit of water

the ratio I like to use is two-thirds teaspoon to 1 cup icing

with the thinner royal icing you're going to flood your cookie

and it's so smooth, it's like a glaze

but it dries hard, I am gonna take a little tooth pick

and look at this you just have the icing touch

I wanted you guys to see the difference

this one was decorated with buttercream icing

and this one with royal icing, so you can see the design difference

so the different consistencies for royal icing are

a thin consistency which we use for flooding cookies,

a medium consistency which we used it outline cookie

and are good to make some icing decorations like I did on video games high school

you can also use this to outline cookies

but I've seen it mostly used to make little icing decorations that you find that the stores.
