Amer Halimi owns a restaurant in Algeria. People from all over the country come to his restaurant. They want to taste his special dish.

Halimi cooks meat. The way he cooks is very special. He makes a hole in the ground in his restaurant. He puts charcoal there.
哈利米会做肉。他做肉的方式很特别。他在餐馆地上挖一个洞。他把炭放进里面。
When the hole is hot enough, he puts meat there. He cooks the meat for 13 to 14 hours. He serves the meat with a special sauce. This sauce makes the meat crunchy and juicy.
当洞里面足够热时,他把肉放进去。肉在里面闷13-14小时。他上这道肉菜的时候配一种特殊的酱料。这种酱料让肉吃起来脆嫩多汁。
In the past, people cook meat on hot stones. This way slowly changes. Halimi thinks of the best ways to cook meat. Guests in his restaurant love the meat.
过去,人们在烫石头上烤肉。这种方法慢慢在改变。哈利米想出来烹饪肉类最好的方法。餐馆的客人们爱吃这种肉。

2. serve:v. (给某人)提供,端上(某道菜),可以说serve sb. sth. 或 serve sth. to sb.。
3. crunchy:adj. 松脆的,另一个也表示“脆的”词是crisp,但crisp一般用来表述易碎的食物,如薯片。
4. juicy:adj. 多汁的;汁液丰富的,也可以指“生动有趣的”。
