切糕是什么?
切糕是玛仁糖的俗称,是一种新疆南疆维吾尔族人民采用传统特色工艺,选用核桃仁、玉米饴、葡萄干、葡萄汁、芝麻、玫瑰花、巴丹杏、枣等原料熬制而成的民族特色食品。因出售时一般用刀从大块玛仁糖切下小块,因此又被称作“切糕”。
传统切糕的做法:江米切糕的做法
原料:红枣、糯米
Ingredient: dates, glutinous rice
制作步骤:
Process:
1.将糯米、红枣淘洗干净,浸泡4小时以上。
First, wash the rice and red dates, then soak them in the water for more than four hours.
2.糯米控干水分入锅、红枣同时进行蒸制。
Drain the water out of these ingredients, then put them in the steamer.
3.蒸制10-12分钟左右开盖,倒入开水,边倒开水边搅拌,使糯米充分吸收水分;待糯米完全被搅拌成糨粥状,盖盖子继续蒸制15分钟。
After ten or twelve minutes, pour some hot water into the pot, stir it in the meantime to make the rice absorb enough water; when it turned into rice gruel, steam again for another fifteen minutes.
4.取出糯米饭、红枣,将糯米饭沾水揉匀,用铲子按成厚薄相当的层片。
put the rice on something flat, use the shovel to press it into thin slices.
5.均匀的码上一层红枣。达到三层饭二层枣,层次分明,饭枣分开。(层次越多越漂亮)
Put the red dates on the surface, then another layer of rice, make it for two or three layers just as you like.
6.重物压于其上,将糯米饭压瓷实。
Put something very heavy on that to make the layers hard and together.
7.用刀顺边从上往下切,放在盘内撒上白糖即可。(刀上抹点水就不容易粘了)
Cut it with the knife into slices, throw some sugar on the surface if you like.
Tips: dip the knife into water before you cut it, then it won't be glutinous.
