So let's go to Cameroon in West Africa

Cameroon is actually a place that is very near and dear to my heart because

I first was there when I was 18 years old

I dropped out of college basically and went to work in Cameron

and ended up been there for a couple of years and worked with midwives there

and actually that's what inspired me to go back and finish my education and go on to medical school and so on

I lived in a very remote little village called Ntui that was in central Cameron and really ended up with an adoptive family there

and one of the things that really affected me the most in Cameroon was the local foods and getting very inspired to start cooking

and I feel like that really was the beginning for me of learning how to cook with my time that I spent there

But Cameroon statistically and actually if you look at most of West Africa and even parts of southern Africa

what's so fascinating from a health standpoint is that in the rural in the very traditional areas

they have some of the lowest rates of colon cancer and colon diseases in general in the world

So you know here I was in this little village in the wayside hospital for a couple years

I didn't see like one case of hemroids or diverticulosis or Crohn's or inflammatory bowel of any kind, much less colon cancer

And what's really fascinating is in the United States, we have some of the highest rates of colon cancer

and African-Americans have even a slightly higher rate than Caucasian Americans

and yet many can trace their ancestry back to West Africa
