In an Interview with Munchies, Sanchidrian gave a bit of insight to what his slicing secrets entail, basically saying that he understands the meat like no other.

"I continued to learn more and improve my skills until I decided to devote myself, body, and soul to this beautiful profession," he told Munchies.

He's now been slicing for over 30 years, saying it felt natural from the first time he grabbed a knife and applied it to the piece of meat.
