Hi guys so I want to show you one of the most beautiful tortellinis that we've got on the new Jamie's Italian menu.

it's summertime, we're going a little bit lighter.

so here, the tortellinis here, handmade and they're absolutely gorgeous.

so...and Andrea is here, he is going to cook some off.

tortellini is part of the ravioli family, which is the name for any filled pasta.
意式饺子是饺子的一种,也是任何带馅儿意面的统称。
today, the filling I'm gonna show you is with this, it's incredible.
今天我们带来的这款馅料,这个了不得了。
this is white asparagus and it's a real, it's a real delicacy.
这个馅料用的是白芦笋,白芦笋是一种上好的食材。
they're really in season for a short amount of time.
上市的时间非常非常短。
and we blanch them, we chop them, we toss them with ricotta, which is a lovely light cheese Parmesan seasoning
我们把它焯一下,然后剁碎,然后和乳清干酪搅拌均匀,乳清干酪是一种口感相对清淡的帕尔玛干酪,
and it makes the most delicious sweet filling.

and that's the point of any kind of ravioli, right.

that it's a little present, a little gift.

so let's cook this up.

we cook the ravioli for like three minutes.
先把饺子煮上三分钟左右。
the pasta is really soft, it's really silky, it's an egg pasta.
这个饺子我们用的是鸡蛋面,非常柔软,而且很丝滑。
and Andrea has browned off a little butter, then added a little bit more fresh butter, so it's light.
而且安德里亚还擦了一点点黄油进去,又加了一点点新鲜的黄油,所以口感相对较淡。
and then put a little lemon juice in, a little vegetable stock, and then he's gonna put some mint in.
接下来挤入少量柠檬汁,少量蔬菜汤,最后放入适量薄荷。
and this makes the most incredible natural little cream.
这样汤汁就会变成奶油状。
so you boil it away, until it becomes this lovely loose cream,

which, just just show them now chef, yeah, so there's the tortellini.

a little seasoning, and that is basically done, really light.

so we'll just give that one more little bring up.

and to serve it, we do two things.

first of all, we have these incredible pea shoot, grown for us.

look at these, guys, so literally from the peas themselves.

they shoot up, and then we snip them and we wash them.

so we have these pea shoots here, and they're properly funky, look at that.

and they actually taste of peas,

so you have white asparagus, ricotta parmesan,

then pea shoots, which tastes like sweet, like peas.

so I'll just put those there.
